“Bean-to-bar chocolate” = doesn’t imply that the cacao used is high-quality or ethically sourced.
“Craft chocolate” = doesn’t exclude the use of couverture (unless you are familiar with the maker).
“Craft bean-to-bar chocolate” = does exclude the use of couverture.
“Premium chocolate” = words that only makers of mediocre chocolate would use.
“Fine chocolate” = nobody really knows.
“Single Origin chocolate” = doesn’t exclude the addition of cacao butter from unknown/questionable sources.
This is why I adore researching and talking to chocolate makers.
You immediately understand who is honest and open, and who is just hiding behind fancy terminology.
